In any gathering, the food is the soul of the party. It doesn’t matter how beautiful the decorations are; if the food is scarce, that’s what people will remember. Before picking the balloon colors, you need to identify the key aspects of your menu.
What is a “Pasapalo”? In Venezuela, we call a drink of liquor a “palo” (literally, a stick). The small appetizers that accompany the drink to help it “pass” better are called pasa-palos. They are the equivalent of Spanish tapas or canapés, Mexican botanas, or Colombian pasabocas. They are easy to eat, varied, and the ultimate solution for any celebration.
5 ESSENTIAL QUESTIONS
Grab a pen and paper and answer these before ordering:
- What type of event is it? (Formal, casual, corporate?)
- What time is it, and how long will it last?
- How many guests are attending?
- Are there special dietary needs? (Gluten-free, vegan?)
- What is the budget?
DOING THE MATH: QUANTITY PER PERSON
Not all pasapalos are created equal. Some are “heavy” (like a mini stuffed arepa) and some are “light” (like a quail egg or a caprese skewer). Use these formulas for an event lasting 3 to 4 hours:
Option A: WITHOUT a Main Course
- Quantity: 12 to 15 pieces per person.
- Mix: 50% Light / 50% Heavy.
Option B: WITH a Main Course
- Quantity: 6 to 8 pieces per person.
- Mix: 70% Light / 30% Heavy.
Adjustments:
- Duration: If the party is under 2 hours, subtract 20%. If it’s over 4 hours, add 20%.
- Kids: Calculate 40% of an adult’s portion for each child.
- Variety: * Up to 50 guests: 6–10 types of pasapalos.
- 100+ guests: 10–18 types of pasapalos.
REAL-LIFE EXAMPLES
Example 1: Large Event WITH Main Course (100 Adults)
- Total pieces: 100 people x 8 pieces = 800 total.
- Proportion: 560 light / 240 heavy.
- Variety: 8 different types.
- Per variety: 70 pieces of each light type / 30 pieces of each heavy type.
Example 2: Small Gathering WITHOUT Main Course (20 Adults)
- Total pieces: 20 people x 12 pieces = 240 total.
- Proportion: 120 light / 120 heavy.
- Variety: 10 different types.
- Per variety: 12 pieces of each light type / 12 pieces of each heavy type.
Note: These formulas apply to everything… except Tequeños. Science has proven that you can never have “enough” tequeños!
